Zesty, Spicy Chickpea Salad…

With all this amazing hot weather we are having, summer is most definitely on its way, and that means more salads and light meals on the menu. I am always looking out for healthy and exciting salads that aren’t just the usual run of the mill lettuce, cucumber and tomato variety and my mom has the most amazing chickpea salad recipe that I am going to share with you. I love this salad! It is refreshing and light, citrusy and spicy and just seems to hit all the right spots. Mmmm… delicious!

Prep time: 15 Mins
Serves: 3-4 large portions

Ingredients:

  • Zesty Spicy Chickpea Salad1 can chickpeas (No added salt) – drained and rinsed
  • ½ a large red onion – diced
  • 1 avocado – diced
  • 2-3 medium tomatoes – diced
  • ½ a cucumber – diced
  • 2-3 radishes – halved and sliced
  • 1-2 chillies sliced or diced /chilli flakes – depending on how spicy your chillies are and how hot you want it to be
  • 1 lemon – juiced
  • Salt and pepper to taste

 Method:

  • Open chickpeas, drain and rinse and add to a large salad bowl
  • Dice all ingredients except the radishes and lemon and add to the bowl
  • Halve and slice the radishes and add to the salad
  • Mix all ingredients well
  • Juice the lemon and add with salt and pepper  to finish
  • Toss lightly to serve

Serving suggestion:

  • Try it with a few slices of toasted Mountain Bread on the side
  • Or on Mountain Bread as an open wrap with the salad piled high on top

This salad is so good, I have been having it at least once a week for lunch. The boys are even enjoying it, but I only add the chillies after I have dished up their portions!
